Like a more rounded, milder Stilton with a long lingering finish. Mike buys milk from a local single herd to ensure not only quality but consistency in his production. This is the first raw milk cheese in Northern Ireland. The maturing process is around three to four months, giving the cheese time to develop its robust mineral flavours. A good foil for the creamier Irish blues, it is perfect with beer and full-bodied red wines.
