Organic cow’s milk from family farm. The cheeses are aged in hay grown on a specific field sown with the most fragrant grass seeds. The hay is dried & roasted to ensure its food safety. The milk is from Merrimoles Farm’s organic 3-way cross herd (Montbeliarde, Swedish Poll and Friesian Holstein). The texture of the cheese is semi-hard & chewy, with a lovely earthy, grassy hit from the hay. A perfect match for stronger hoppy style ales or a full bodied Bordeaux red wine.
