Made by Jason and Nina Wilson in the northernmost dairy in Scotland. In the style of certain alpine French cheeses – cooked pressed curd with a smear-washed rind – the result is a subtle and delicately nutty cheese. Lactic upon first taste, the flavours deepen into a lush grassy finish, redolent of the dairy's seaside location and the cattle's grazing on slopes lashed with salty breezes.
