From the same dairy as the classic goat milk Ticklemore, this savoury ewe cheese has a herbaceous edge that is silky on the palate. The curds are washed during production, removing excess lactic acid and giving the flavours a gentler earthiness. The pate is springy in texture, with a slight chewiness that adds to the richness. The rind, if eaten will give a nice acidic bite.
