Harvested between 1st and 20th of September, the grapes are pressed in vertical baskets and decanted twelve hours later. Maturation takes place on the lees (residue of the grape) in stainless steel tanks for six months and is then finished in the bottle for another six months. Even at 14% alcohol it is light, fragrant and very drinkable. Enjoy on its own as an aperitif or with light fish or antipasti, salad or risotto. Perfect with light frothy milder goat's cheeses, such as Caprini Freschi.
