From a small farm with only eighty goats in a region not especially known for its goat cheeses. Named 'Black Truffle' not because of the addition of truffles, but rather due to its uncanny resemblance to the fungus. The texture is deliciously fudgy, aged before sale for a minimum of three weeks (we tend to continue aging up to eight weeks) the texture is drier than other styles with a farmy edge to the flavour profile. For pairing, a red wine would be preferred.
