The traditional method of heating the milk in a copper pan gives the milk a wonderful fruity richness. The three months maturing also enhances the flavours together with salt/water rubs to the outside rind. Young versions have a fondant softness with a lovely fresh fruity aroma. Enjoy with a dry Chardonnay or smooth Pinot Noir.
