The Art of Butter:
Workshop & SPRING SUPPER

For our first workshop of the year we will be focussing on Butter – its taste, texture and techniques in the kitchen. In the shop we have several varieties of butter from France, Italy & Britain; from France the famed Bordier Butter, known for producing delicately flavoured butters using seaweed, yuzu, espelette, and even smoked – they also create house butters for some of the most famous restaurants in France.
Max, one of our cheesemongers, has been perfecting the art of cultured butter making with our rich Normandy Creme Fraiche, resulting in a bright, delicate and clean butter. He will be demonstrating the process involved in producing it.
Alessandro will then prepare a light spring supper exploring the techniques of cooking with the butter: Asparagus with Maitre d'Hotel Butter, Pan-Fried Fish with Buerre Blanc and Lemon Curd with Buttery Shortbread.
