The Lacaune ewe’s milk provides the depth of flavours & richness to this very seasonal cheese.  By brine washing the rind it gives the taste a real boost of savoury, herbaceous, tangy flavours combined with a full bodied aroma rather like the French Epoisses or Munster.  Martin & Nicola Gott follow a non-intensive way of farming on the wonderful pastures of Holker Estate, & milk once a day for a better quality milk together with using home made cultures to fully embrace the terroir.
