Barrique-aged for twelve months, bottled and then left to rest for a further four months before release. This wine has a rich, vibrant dark hue. On the nose there are deep fruits and a distinctive metallic edge can be detected. These follow through to the palate, with the added presence of rhubarb, black pepper and spice, with the final flourish of deep, sweet balsamic tannins, all indicative of the hot Sicilian countryside and the connection with the coast and famous local salt fields. Enjoy with local ripened pecorinos, Ragusano, Provolone del Monaco, and rich salty Prosciutto.
