This grape style is usually associated with Tuscan wines, but in this part of Puglia the grapes ripen at the end of September. They are harvested manually, before crushing and de-stemming within an hour of picking. The wine has a deep ruby robe, developing garnet undertones with ageing. An intense bouquet of Maraschino, plums and warm spices. In the mouth there is a dry edge with tannins that are balanced along with the full body and structure. Good with roasted meats and game, as well as hard pecorinos.
