Charlie Westhead has a delicate touch with his goat cheeses.  There is a purity to the milk (there may be traces of cow’s milk but not noticeable simply because he works with both cow and goat milks). We like Ragstone as a younger style rather than too mature in order to enjoy the sweet, nutty and fresh taste of the milk with its mellow fruity finish.
