Patricia, our founder, has hand selected a great selection of cheeses to be enjoyed this Spring. This wonderful cheeseboard has dipped into several countries to
show just how flavours and styles meld together to make the perfect seasonal change.

CHEESES


Fleur de Chevre | Poitou-Charentes, Unpasteurised, Goat - 1 unit. Drum-shaped cheese with a thin natural rind and a fresh, light texture. Wrapped in a protective vine leaf, it is an ideal opening cheese on your board

St Jude | Suffolk, Unpasteurised, Cow - 1 unit. The milk is slowly and gently turned into curds with little intervention – simply lifting the curds and ladling into moulds, turning daily until ready for sale. The flavours of the pasture are intact giving the cheese an earthy richness becoming more evident as it ages.

Laguiole | Auvergne, Unpasteurised, Cow - 250g. Made from the milk of Aubrac and Simmental cattle, Laguiole has a smooth texture and a fruity clean taste, rather like English cheddars (probably the most well-known uncooked pressed cheese).

Alpe Bergkase | Bregenzer Wald, Unpasteurised, Cow - 250g. This  Austrian cheese is superb with a hard almost caramel edge to the beefy yet buttery & salty flavours. Really intense & chewy & an absolute gem!

Durrus | County Cork, Pasteurised, Cow - 250g. A semi-soft washed & brushed pinky beige crust, low in fat from using morning milk only. Rather crumbly & creamy in the centre with the edges mellow & melting.

Bleu de Basque | Pays-Basque, Pyrénées, Pasteurised, Ewe - 250g. An unusual cheese from the mountain region of Pays Basque. This is a semi-hard cheese with the blue veins ‘parsleyed’ through the dense rich mellow cheese.
