For Spring, a few of our senior cheesemongers - Max (Senior Cheesemonger) and Patrick (Warehouse Manager) and David (Head Cheesemonger) have been putting together their ideal cheeseboard for this time of year.

These cheeses showcase the best of seasonal, raw milk, local starter and pasture fed cheeses coming into their own at this time of year. We’ve chosen an unconventional cheeseboard order that focuses on the contribution primary, secondary fermentation and further affinage makes to the flavours and textures of the cheese. CHEESES

  • Petit Jabron | Hautes Provence, Unpasteurised Goat's Milk - 1 unit. A small fresh medallion with a thin natural rind. Available from April to the end of October, this smooth velvety cheese typifies summer in the south of France. 
  • Valencay | Indre/Berry, Unpasteurised Goat's Milk - 1 unit.  A creamy, ash-coated truncated pyramid with a startling white pate. The texture is light and moussey and saltier than other Loire Valley goat’s cheeses. 
  • Laguiole | Auvergne, Unpasteurised Cow's Milk - 250g. Made from the milk of Aubrac and Simmental cattle, Laguiole has a smooth texture and a fruity clean taste, rather like English cheddars (probably the most well-known uncooked pressed cheese). 
  • Langres Remillet | Champagne, Unpasteurised Cow's Milk - 1 unit. Drum-shaped with a depressed, crater-like top (due to not turning the cheese during early affinage) with a soft, luminous, pale orange rind. Washed in Marc du Champagne, the interior pate is rich, moist, and spicy, and should be almost melting below the rind with a flaky centre. 
  • Roquefort Carles | Rouergue, Unpasteurised Ewe's Milk - 250g. Small production of a strong artisan-made well-marbled blue cheese. Handmade, the producers extract their own penicillium roqueforti from rye bread baked in-house. Like other Roquefort productions, the milk comes solely from the Lacaune breed – whose yield is notably large compared to other breeds – creating an intense, powerfully flavoured cheese.
