PIRAMIDE DI CAPRA
From the province of Cuneo, this pyramid-shaped goat’s milk is covered with a rather thick geotrichum rind and dusted with ash. This gives the cheese a vegetal minerality with hints of mushrooms contrasting a light acidity from a crumbly pate and melting edges. Younger cheeses will be looser in texture and showcase a rather light, lactic quality, with more matured versions becoming firmer, more piquant and ultimately more complex.
