LA FROMAGERIE BISCUITS
In December 2010 we launched our own line of biscuits specially designed to complement our farmhouse cheese. Hand-baked in small batches to ensure quality and consistency, they contain no additives. Like our cheese, the biscuits are made by hand using simple, good quality ingredients. From the elegant shape and fine crisp snap of the Charcoal, Rye & delicate Caraway Biscuits, to the golden toasted nuttiness of the Oat Biscuits, they are the perfect accompaniment to your cheese board.
The Guild of Fine Food Gold Taste 2011 Awards awarded the Oat Biscuits two gold stars. The Charcoal Biscuits were awarded one gold star.
PAIR WITH GOUDA, GRUYERE AND WASHED RIND CHEESES
Made with Matzo flour to ensure a satisfying crispy snap. From pungent washed rind southern Irish cheeses, to a classic Epoisses, high mountain Gruyère or matured Gouda Boerenkaas, the Caraway works perfectly. Pair with blond beer or a chilled Riesling-style wine.
PAIR WITH GOAT CHEESE, CAMEMBERT AND CREAMY BLUES
Pairs beautifully with all styles of goat’s cheese and white wines from the Loire, such as Sancerre, complemented by fresh hazelnuts and grapes. Bloomy rind cheeses like Camembert with a dry Pinot Noir. Delicious with creamy blue cheese such as Gorgonzola Dolce, paired with a fruity Barbera from Piedmont.
PAIR WITH MATURE CHEDDAR, STILTON AND BRIE DE MEAUX
Pairs perfectly with full-flavoured farmhouse cheeses such as Montgomery's Cheddar and Lancashire; serve with crisp apples and dry cider or malty ales and beers. Also with a good Stilton and port, or bloomy rind cheeses such as Brie de Meaux paired with a red Bordeaux. Particularly enjoyable with a cup of tea too.
PAIR WITH BEAUFORT, EWE’S MILK AND WASHED RINDS
Comté d’Estive and our signature cheese, Beaufort Chalet d’Alpage make an elegant pairing with a delicate moussey Champagne or a creamy Chardonnay, accompanied by raw almonds. Sweet earthy ewe’s milk cheeses such as Ossau paired with a fruity Syrah. For the more adventurous, pair pungent washed rind cheeses with a lighter style single malt whisky.
JAMS, CHUTNEYS & OTHER JARS
Throughout the year our kitchen makes seasonal jams, chutneys, preserves & pickles. Luscious summer fruit jams and bramble, fruit & herb jellies; chutneys include spiced green tomato, chilli, piccalilli and onion marmalade – all perfect accompaniments to cold roast meats and mature farmhouse cheeses such as Lincolnshire Poacher Double Barrel.
Not forgetting our homemade pesto, made to Patricia's recipe with five different pecorinos and our three year aged Parmigiano-Reggiano, and our homemade tomato ketchup, essential on a bacon sandwich or handmade burger.

P.LOUIS MARTIN NV BRUT
Blend: 70% Pinot Noir & 30% Chardonnay
This is a delicious Champagne, we chose it in particular (after trying a lot of Champagnes!) as it paired so well with our cheeses, particularly the classic pairings of Chaource & Ami du Chambertin. It has a bright golden robe; with a toasty, buttery nose. Delicate bubbles with a good balance between power, gentle acidity & freshness with a long, clean & elegant finish.
THE ORIGIN OF P. LOUIS MARTIN CHAMPAGNE
Louis Martin was a keen champenois. He actively participated in founding the Bouzy Cooperative and was elected its founding President. Thus he started out in winemaking in 1929. His son Paul helped him in extending the chalky cellars in order to obtain the best conditions for ageing the wine. They were dedicated to the terroir of their village. The Village of Bouzy was named as a Grand Cru Village, in part due to the excellent quality of the Pinot Noir grown there. Among the 17 Champagne Villages classed as Grand Cru producers, Bouzy has an exclusive vineyard: facing due south on chalky soil. It has a remarkable micro-climate protected from north winds by Montagne de Reims. Louis Martin’s Pinot Noir vineyards still form the majority of all the wine blends & have an average age of 20 years.

From San Demetrio Corone, Cosenza, Calabria in the south of Italy. This superb single estate organic first cold pressed Cassansese olive oil has a lively fruity flavour which is in harmony from beginning to end, making it a perfect oil to dress salads or main dishes.
