TRADITIONAL RENNET

Oma, produced by von Trapp Farmstead in Waitsfield, Vermont. The tomme-style cheese made from predominantly Jersey milk  is delivered to Jasper Hill maturing cellars unripened as a ‘green’ cheese.  Oma balances pungent and sweet flavours with aromas of roasted nuts & a meaty slightly buttery crème fraiche fruitiness.  The thin rind with scattered white flora is an earthy foil to the richness of the pate.
