A small cheese packed with rich, floral flavours and a lovely yeasty, lactic tang. The texture, which is soft throughout, has a pleasant, faintly gelatinous quality, distinguishing it from other fresh cow's milk cheeses. Milk from the farm next door is processed quickly and with little intervention into the moulds. It is then ripened to form a thin, delicate rind. A cheese by cheesemakers with the future of British cheese very much in mind.
