TRADITIONAL RENNET

A high mountain cheese aged approximately 10 - 12 months. With a rich, slightly springy texture, it is a great cheese for use in conjunction with Beaufort, Comte & Emmental in fondue, or for melting into a gratin or sauces. The full-bodied gamey flavour has a tangy edge, underscored with the more traditional alpine notes of dried fruit and nuts.
