On similar lines to the Lauragais French goat cheese Cathare, this is a similar version of the saucer shaped goat cheese with the tender rind ash coated and the letter K imprinted.  The creamy texture is from the hand ladling of the curds “moule a la louche” technique, and made from unpasteurised goat’s milk from a farm in Flanders.
