Jean-Marc Grussaute's steep terraces are carefully marked out for each style of Jurançon. The side called Costat Darrer is sheltered for a slower maturation of the vines, with fermentation in new oak barrels for some of the time. His style of wine, especially the Costat Darrer, is particularly suited to the Ossau cheese. Being sheltered from the strongest rays of sunshine gives the grapes a lovely fruity sharpness, with dried fruit on the finish. A superb wine for an aperitif lightly chilled, or to serve with a rich Foie Gras.
