The Azores archipelago cluster of volcanic islands have cheeses with a distinct characters from the soil minerals & the salty sea spray from the Atlantic ocean too. The styles of the cheeses is a cross between a British cheddar and a Dutch Gouda & can be quite sharp & pronounced becoming mellower with vanilla warmth with maturing.
