A mineral-rich goat's milk blue that is perfect with both white and dry, tannic red wines, as well as a dry sparkling Champagne-style. The texture is quite unusual for a goat's cheese, with its springy creaminess. The tangy taste of the salty blue veins threading through the sweet earthiness of the curds makes for a complex and quite rewarding finish. A very good example of a young group tinkering with traditional techniques to create something unique and new.
