A real oddball Wisconsin blue, with the heat of Italian chilli mixed into the curds. It took first place at the prestigious 2014 U.S. Cheese Society Competition in Sacramento, CA. With the richness of milk from Holstein cattle (along with some Jersey, Guernsey & Brown Swiss in the mix) the cheese achieves a perfect balance of heat and creaminess. Opening with buttery salt, the chilli emerges at the end of the taste, flaring up on the palate.
