TRADITIONAL RENNET

From the traditional Tilsiter cheesemaking region, Willi Schmidt decided to work with the farmers in the area to create a new cheese. Rather like the Vacherin du Haut-Doubs, using a bark collar to hold the cheese together, the flavours are nutty and fruity with a rich texture redolent of clotted cream. Eaten with the rind the flavours can become quite overpowering, but with it removed the pate becomes subtle with silky richness and a perfume of spruce.
