Made by Highland Fine Cheese, a family diary making since 1963. This camembert-sized brie-style has a supple melting texture with a tender bloomy rind. The flavours are characteristic of young ewe's milk with a sweet and mild gaminess emerging. The white moulds on the rind offer hints of mushroom whilst the pate has unmistakable notes of horseradish.
