Pasteurised Goat, Ewe & Cow Milk
The rind of this mixed milk cheese has been washed in a brine and allowed to ripen in airy cellars before adding a charcoal ash coating. (The name translates to 'little charcoal'.) The flavours coming through are light and subtle when young, becoming more intense with maturing. A delightful end-of-meal cheese to enjoy with a richer styled white wine or fruity dry reds.
