TRADITIONAL RENNET

Semi-soft with a washed rind, with some light grey and white natural evolving moulds. There is a light lactic tang with a buttery breakdown just under the rind. The centre of the cheese is still quite flaky.  Flavours of fresh yoghurt when young becoming richer with more aromatic and savoury mossy tastes as it ages. Perfect with Pale Ale or wheat beers.
