The cheesemaking part of the LaClare Farm started in 2008 and the Hendrichs have become world-class cheesemakers with their goat cheeses. The Evalon has a great nutty Gouda style, with hints of Asiago salty sweetness coming through. A perfect morning or lunchtime cheese, lovely grated over vegetables or pasta. Beer is perhaps the best pairing.
