Easter is later this year on the calendar, and our Cheese Rooms are awash with new season goat and ewe's milk varieties filling up the shelves that looked a little bare during the winter months. Apart from the welcome lighter evenings we love the brightness of the grass, the vibrant colours of vegetables and salads appearing but most of all the asparagus and artichokes to bring the changes from the heavier winter vegetable dishes. Crumbly fresh cheeses are wonderful as a topping or into a sauce, and we love making blue cheese butter to melt on steak or lamb chops.
However there is no doubt it is the cheese board that is such a pleasure at this time of year and we have a wonderful board to offer you this month, together with wines and other accompaniments. Easter is often all about chocolate and Hot Cross buns, but there are also the sweet, savoury, rich and buttery flavours of cheese that stand out too, and what better way to entertain family and friends over the long weekend than a selection of perfectly ripe and seasonal cheese.

From Bernard Dufoux in Burgundy we have the exquisite 'Chocolate Sardines', from Monsumano in Tuscany we have Slitti Chocolate Buttons, along with an array of Tortines made with hazelnuts, raisins & crisp rice enrobed in dark or milk chocolate.
Our kitchen will be making Pasqualine, a classic puff pastry filled with Spinach & Ricotta with an egg baked in the centre, one will also feature artichokes; alongside an assortment of cookies and Easter cupcakes, as well as a traditional Simnel cake.

Join Patricia at our annual Easter Cookie Workshop. Your budding little chefs will be kitted out with an apron as they unleash their decorating skills on Gingerbread Men, Easter Cookies, Fruit Buns and Easter Nests - everything made will be carefully boxed up to take home. There is also a prize for the best Easter Egg design picture - so don't be late arriving to get this completed. The workshop is aimed to have fun and there will be plenty of cake decorations and icing pens to make amazing creations.
