The area of Lauragais is steeped in history & many artisans from cheesemakers to cabinet makers & the famous handmade clay pots called ‘cassole’ can be found in the area which is just south of Toulouse. This is a tender cheese, with a thin bloomy rind dusted with charcoal. The flavours are yeasty with a light mushroom, earthy appeal rather like a Camembert. Good with a dry red wine like Ch. Beaulieu from Marmande.
