Originally developed as a modern new cheese to become a future classic.  The recipe follows a gouda style but by adding the sweeter alpine style starter and maturing for 16 months, this gives the cheese a deep and rounded taste that embraces both Dutch and alpine traditions.  The buttery caramel taste is firm to cut but becomes flaky and melting once in the mouth.
