Tom and Lena have gleaned cheesemaking experience from their Dutch neighbour. Handmade from a free-range herd of around eighty goats (Saanen and Toggenburg breeds) they have produced a rather unique farmhouse cheese, waxed in the style of a Gouda. The perfect pasture-grazing and a strict adherence to the animals' natural lactation cycle (drying out at the end of November) means this cheese has limited availability and great seasonal variability. The flavours are seldom soapy (as other hard goat's cheeses can become), and are instead sweet and complex, with a delicate sharpness and underlying earthiness.
