Blend: 70% Pinot Noir & 30% Chardonnay
This is a delicious Champagne, we chose it in particular (after trying a lot of Champagnes!) as it paired so well with our cheeses, particularly the classic pairings of Chaource & Ami du ChambertinIt has a bright golden robe; with a toasty, buttery nose. Delicate bubbles with a good balance between power, gentle acidity & freshness with a long, clean & elegant finish.

Louis Martin was a keen Champenois. He actively participated in founding the Bouzy Cooperative and was elected its founding President. Thus he started out in wine making in 1929. His son Paul actively helped him in particular in extending the chalky cellars in order to obtain the best conditions for ageing the wine. They were dedicated to the terroir of their village. The Village of Bouzy was named as a Grand Cru Village, in part due to the excellent quality of the Pinot Noir grown there. Among the 17 Champagne Villages classed as Grand Cru producers, Bouzy has an exclusive vineyard: facing due south, on chalky soil. It has a remarkable micro-climate: protected from the north winds by Montagne de Reims. Louis Martin’s Pinot Noir vineyards still form the majority of all the wine blends & have an average age of 20 years.

Each month we offer Cheese Boxes for those who can't make it in to The Cheese Room. Chosen by our cheesemongers, the selection includes five cheeses we feel are eating their absolute best. Different than the Gift Hampers, these boxes are pared down to just the cheese, and are best suited for dinner parties of four to six guests.
(For larger dinner parties we advise ordering two or more boxes.)

Selected very much as we would advise in The Cheese Room, the box will usually include the full range –
that is a goat, a soft/bloomy, a hard, a washed rind & a blue.

Cheese will arrive labelled with tasting notes and care instructions.

Please note that the last day for customer deliveries in Central London will be midday Friday 24 December 2014 (this must be pre-booked). Due to the lack of space we are not able to store items for collection in later December except for freshly prepared items. The last day for sending orders with an overnight courier is
Monday 22 December 2014.


The final pre-Christmas Outside London Next Day orders will be delivered on Friday 19 December 2014. (Cheese in the boxes will be in fine shape for Christmas day.)
The final pre-Christmas London Same Day orders will be delivered on Monday 22 December 2014.

Any orders placed for delivery after these two cutoff dates will be notified and alternate shipping days will be arranged.
