The close-textured Chabichou becoming sweeter and crumblier with age; Perail fresh, rich melting pate, velvety on the palate, with pleasant notes of sweet earthiness; Laguiole's smooth texture and clean fruity taste, tangy but not aggressive; Vieux Boulogne, pronounced and earthy flavours, with wild mushroom, savoury undertones; deliciously creamy Bleu de Bonneval soft and tender, with a steely kick & lovely depth.

Domaine L Kirmann, Epfig, Alsace
100% Riesling. The domaine in is Epfig, some fifty kilometers south of Strasbourg. The estate has been in the family now for three generations and is now run by Olivier, who took over in 1996. The wine is from grapes selected from the oldest vines on the slope side of the vineyard. Perfect Riesling character from the simple philosophy of their winemaking: the respect for the land and the vine, which gives a purity of taste. Full-bodied, with excellent acidity and a long zesty fruit and mineral finish. A perfect cheese wine.
Chateau Le Roc, Cotes de Frontonnais
60% Negrette, 40% Syrah. This cuvée is from a selection of plots planted on stoney alluvial soil termed 'boulbenes' in the region. It is low clay with white sandy loam and naturally acidity which all goes into the big flavour profile of the wine, as well as the importance of terracing the vines to allow free drainage. The grapes are not crushed, but placed in tanks and gravity slowly presses the juice. A different working approach called 'punching' promotes flavour but softer tannins. The immediate aroma is violet and liquorice and once in the mouth there is a burst of rich fruity flavours with a white pepper hit. Fine and silky, with a wonderful length.

A coarse-textured small salame typical of the region. Fruity, peppery and chewy, with earthy undertones of the maturing caves.
