The mellow, tangy Sinodun Hill with faint citrus notes & a nutty edge; Bix, dense and rich, hints of yoghurt & grassy sweetness; Gorwydd Caerphilly's familiar crumbly texture, with fresh, earthy mellow tones; the firm, springy textured Gubbeen with a savoury, herby & faint floral quality; Crozier Blue's creamy, slightly gritty texture & uniquely Irish flavours: sweet on the front, finishing with an expansive depth of spicy salt.

46% Phoenix, 22% Madeleine Angevine, 17% Reichensteiner, 10% Orion & 5% Solaris. A crisp, refreshing wine providing distinctly English aromas of crisp green apple, elderflower & freshly cut grass. The ripe fruit flavours and soft acidity balance nicely to create a bright, refreshing wine. Fantastic on its own or with fish dishes. All grapes are hand-picked for minimum intervention, which truly expresses the vineyard & vintage.
Gascony, SW France
80% Tannat & 20% Cabernet Sauvignon. The unique terroir of Alain Brumont's sprawling estate lends itself to profound wines that age beautifully. Often referred to as the Burgundy of the South West, the gentle slopes are littered with pebbles to allow the vines to spread and dig deep into the soil. The forward taste of fruit is evident but there is also spice, tobacco and long lingering tannins tending towards persistence and elegance – always best to open the bottle at least two hours before and decant. A perfect wine for meats, lamb, duck, game & coq au vin. A full-flavoured cheese course will lend itself enormously well.
Casan, Midi-Pyrénées, SW France
A coarse-textured small salame typical of the region. Fruity, peppery and chewy, with earthy undertones of the maturing caves.
Quince paste, slow-cooked to become concentrated, similar to a coarse-textured jelly. Serve with hard ewe's milk cheeses, fresh or aged goat's or blues.
From Sacchi Tartufi in Marche, Italy.
Acacia honey with chopped white truffles. Perfect with a range of cheeses – from creamy goats to spicier and more complex aged cheeses.
Throughout the year our kitchen brings down from the shop floor the loveliest seasonal ingredients and makes jams, marmalades & chutneys to last us through the colder months. Made in small batches, the ingredients change frequently throughout the year to ensure the freshest produce goes into our chutneys. Gorgeous alongside a cheese board but perhaps best on a simple sandwich with a slice of farmhouse cheddar!
