Capretta di Toscana: A light sweetly milky nutty tasting hard goat’s cheese which is especially good during the summer months.
Robiola: Deliciously soft & melting cheeses with tender natural bloomy rinds - the creamy soft pâté tastes sweet & nutty almost like fresh cobnuts.
Pecorino Ambrato: The honey coloured rind is from rubbing with brine & then oiling the cheese to keep a smooth outside crust, while the cheese within is sweetly earthy & nutty.
Pecorino al Peperoncino: The taste on first impact is sweet & mellow but as the chilli hits the full hot spicy taste comes to the fore.
Blu di Pecora: This creamy dense ewe’s milk blue with a sharp minerality can be compared with Roquefort.

An Amarone style from Lake Garda. Grapes are dried for 40 days on wooden racks to produce a wonderfully aromatic style. The wine spends 3 years in oak and leaving for 1 year in the bottle before ready to sell. This very well balanced almost succulent wine with rich red berry fruits and cherry has vanilla overtones & typical tobacco and bittersweet chocolate.
