Fleur de Chevre: A fresh, light textured cheese salted with Fleur de Sel, giving the taste a gentleness quite unlike the usual goat’s cheeses.
Coup de Corne: A tender cheese with a thin bloomy rind dusted with charcoal. The flavours are yeasty with a light mushroom, earthy appeal rather like a Camembert.
Tomme d’Aydius: This smooth semi-hard cheese has a lovely pale rosy hue to the brine rubbed crust & tastes sweetly earthy & nutty with delicious tones of wild flowers & herbs.
Chevrotin: With a washed pale rind and a rich & floral flavour with a pleasant goaty aroma, the pâté becomes full bodied & meltingly moist with a little age.
Zelu Koloria: A semi-hard, rich, mellow cheese with the blue veins ‘parsleyed’ through. The natural brushed crust is quite dry when young, but as the cheese ages becomes a little moist thereby giving the cheese an extra tangy richness.

100% Viognier. The vines are 25 years old – ideal for this style of wine. De-stemmed grapes are macerated on the skins and vinified in one-to-four-season-old oak barriques, with no additional years as battonage (this is when hand-stirring is utilised to keep the inherent yeasts active and the silky aromatic style emerges). The wine is then matured in 600 litre oak barrels for three months before bottling in Spring. Apricots, pears, almonds & violets with spice tones; this wine is perfect for cheese.

Agnes & Robert Schulte’s top wine from 40 year old vines. Rigorous selection produces low yields, & all the above grapes are the dominant vines with Syrah, Malbec & Abouriou also featuring. Matured for 12 months in 75% new oak barrels. Deliciously dense with exceptional concentration.  Fruity with spice & chocolate and good tannin strength. Open and decant at least 4 hours. 2003 was a hot summer and the wines have forward tannins & a racy finish.

Throughout the year our kitchen brings down from the shop floor the loveliest seasonal ingredients and makes jams, marmalades & chutneys to last us through the colder months. Made in small batches, the ingredients change frequently throughout the year to ensure the freshest produce goes into our chutneys. Gorgeous alongside a cheese board but perhaps best on a simple sandwich with a slice of farmhouse cheddar!
