Tasting Notes
Straw Mat for Serving

Bosworth Ash: A matured goat’s cheese with a close texture & dusted with charcoal.
Perail: A fresh, shallow creamy disc with natural rind & rich melting pâté. The flavour is pronounced & delicious, with the familiar sweet earthiness of fresh sheep’s milk.
Alex: The cooked and pressed curd of this semi-hard cheese has its rind washed in a brine infused with local herbs giving a bosky aroma on the rind and intensity to the taste of the cheese.
Herve: We have the piquant version which is left to mature for longer and the rind is washed more often in order to obtain the wonderful powerful taste.
Bayrischer Blauchimmelkase: A stunning Bavarian Blue, this rich & densely creamy blue has a mellow taste with a lovely nutty, toasty edge.

PAIRING WINES

RIESLING VIEILLES VIGNES
20.45

Domaine L Kirmann, Epfig, Alsace

100% RIESLING

The domaine in is Epfig, some fifty kilometers south of Strasbourg. The estate has been in the family now for three generations and is now run by Olivier, who took over in 1996. The wine is from grapes selected from the oldest vines on the slope side of the vineyard. Perfect Riesling character from the simple philosophy of their winemaking: the respect for the land and the vine, which gives a purity of taste. Full-bodied, with excellent acidity and a long zesty fruit and mineral finish. A perfect cheese wine.

FROMETON BIERE
7.80

Christophe Noyon, Pays Boulonnais

Best served lightly chilled. Developed in collaboration with Philippe Olivier, a master-cheesemonger based in Boulogne. The mixture of the malted barleys and choice of an aromatic hops is how the beer draws its original perfume. The balance of its fruity noise and its delicate bitterness also lends itself quite naturally to the local cheeses of the region.
