Chateau Le Roc, Cotes de Frontonnais

60% Negrette, 40% Syrah. This cuvée is from a selection of plots planted on stoney alluvial soil termed 'boulbenes' in the region. It is low clay with white sandy loam and naturally acidity which all goes into the big flavour profile of the wine, as well as the importance of terracing the vines to allow free drainage. The grapes are not crushed, but placed in tanks and gravity slowly presses the juice. A different working approach called 'punching' promotes flavour but softer tannins. The immediate aroma is violet and liquorice and once in the mouth there is a burst of rich fruity flavours with a white pepper hit. Fine and silky, with a wonderful length.

Chrystal’s Shortbread is a small independent bakery based near Loch Lomond in Argyll, Scotland. Run by husband and wife Chrystal and Rory Mackinlay, their recipe is the same one passed down through generations of Chrystal’s family - they still hand cut their shortbread. 80g.

Named after the cheesemaker’s mother-in-law who does not eat Blue cheese (for which the farm is famous), this is an unpressed cheese in the style of traditional cheeses of Scotland before cheddaring was introduced. The sharp lactic edge is reminiscent of Wensleydale, but again that vegetal tang to the taste & aroma comes forward in typical style & whisky comes to mind as the drinking partner, as well as as a stout or Pale Ale.

Lambton & Jackson are based in Maldon, Essex and buy salmon from the Shetland Islands.  One of the main benefits of the Shetlands is the salmon are farmed in open seas, which creates stronger tides and constant exchange of water, giving a tastier and much leaner salmon as they swim against the strong tides. Their Maldon 'London' Cure is a traditional ‘light’ cure, ‘D’ sliced to enjoy the top & middle bottom of the cut.

Small cheddar truckle infused with Ledaig whisky from the local distillery.  The cheese has the rich spicy quality as the herd are fed a mixture of the ‘mash’ from the local whisky distillery.  The added malt whisky to the curds imparts a strength but also a smoky sweetness too.  Delightful when matched with a whisky.
