Caprini Tartufo: The ultimate luxury treat. A fresh handmade goat’s cheese topped with shaved truffles. The earthy woody aromas give way to the balanced sweet/sharp taste of the cheese.
Rosso di Langa: The rich cream texture has a subtle aroma of fresh grass and hay, with a mellow taste almost like clotted cream.
Pecorino Ambrato: A clean and well-balanced Pecorino. The sheep graze on open hillside pastures with fresh foraged feed only, making each wheel different than the next, and seasonality at the forefront. The three-month-aged versions are sweet, earthy and nutty.
Ragusano: This stretched curd cheese – formed into a squared-off log – is quite unique, with a spicy taste and a chewy open texture. Notes of burnt orange, crusty bread, pepper and the buttery straw punctuate the long, complex arc of flavour.
Blu di Pecora: This creamy dense ewe's milk blue with a sharp minerality can be compared to Roquefort. A superb cheese for fine Barolo and Barbaresco wines, as well as Barbera d'Asti.
