Tasting Notes
Straw Mat for Serving

La Laurentine: This cheese is matured three weeks before sale, and is creamy just below the rind with a strong and goaty appeal. Topped with a baby bay leaf, it is perfect with Languedoc Roussillon, as well as the more minerally, terroir-driven red wines of the region.
Coup de Corne: A tender cheese, with a thin bloomy rind dusted with charcoal. The flavours are yeasty with a light mushroom, earthy appeal rather like a Camembert.
Sao Jorges: One of the rare cow's milk cheeses of Portugal, this cheese has a lovely sharp nuttiness, redolent of cheddar, with a simmering undertone of the farm that extends the depth of flavour, and lends a persistent finish.
Casinca: Soft springy texture with a tender orange rind from the brine and ferment washing. The taste is rich and mellow, with definitive goaty flavours coming through, as well as a real sharp nutty taste.
Peralzola: A relatively new cheese in the style of Roquefort (ewe's milk, penicillium roqueforti, foil wrapping) but notably less aggressive, with distinct undertones of almond.

Cotes du Rhone Village

Domaine de Piaugier, Sablet, Southern Rhone

Grenache Blanc, Viognier, Clairette, Roussanne & Marsanne. Maceration of the fruit on the skins, vinification and ageing in two-season-old barrels and storage on lees until bottled. The region's sandy soil expresses a range of grape varieties. Hand-harvested with elevage on lees (stirring carefully to give more body to the final wine). The aromas are peach with apricot and a delightful vibrancy and minerality, making this refreshing and clean.

CAMINS DEL PRIORAT
25.10

Alvaros Palacios, Grattalops, Spain

50% Carignena, 40% Garnacha & 10% Cabernet Sauvignon. Alvaros Palacios came to Grattalops in 1989 to work his magic on the rugged and difficult terrain, producing exceptional wines with Camins being the entry level. The terraced slopes are planted with vines aged from 10 to 50 years, and the wine spends eight months in older French barrels to attain its full and fruity flavours of mineral and spice with soft, rounded tannins.
