Tasting Notes
Straw Mat for Serving

Bosworth Ash Log: A matured goat's cheese with a close texture, dusted with charcoal. Distinct and earthy, with a fudgy texture.
Flower Marie: A rich cheese with a pillowy bloom on the rind. Grassy, earthy overtones with a sweet vegetal essence from the ewe's milk.
Gorwydd Caerphilly: A traditional-style Caerphilly with a superb natural grey rind. The cheese has a familiar crumbly texture, yet tastes fresh and creamy, with lovely earthy mellow tones.
Baronet: Jersey milk which is rich and buttery needs careful handling to control the fat content and keep the flavours from becoming too overwhelming. With the rind brine-washed and rubbed in the Reblochon alpine style, this cheese has a wonderful depth of subtle, rich savoury flavours.
Shropshire Blue: Made by the cheesemakers at Cropwell Bishop, this cheese is very similar in style to (although mellower than) Stilton, with a sharp, metallic edge coming from the roqueforti moulds.

PAIRING WINES

FROMETON BIERE
7.80

Christophe Noyon, Pays Boulonnais

Best served lightly chilled. Developed in collaboration with Philippe Olivier, a master-cheesemonger based in Boulogne. The mixture of the malted barleys and choice of an aromatic hops is how the beer draws its original perfume. The balance of its fruity noise and its delicate bitterness also lends itself quite naturally to the local cheeses of the region.

SABLET ROUGE
18.65

Cotes du Rhone Village

Domaine de Piaugier, Sablet, Southern Rhone

Grenache & Syrah. 25-year-old vines with manual harvest. Once the grapes have been de-stemmed and juice released it then spends 3 weeks in concrete tanks, then aged partly in four-season-old oak barriques. Bottled without filtering. The wines show a lightness in style with beautiful fruit and hints of licorice. A wine to be enjoyed young & with cheese.
