This is 14% ABV and the grapes are hand-harvested between 10th - 15th September. After basket pressing they are placed in stainless steel, with this Selezione having partial grape skin contact. Small barriques are used in the initial ripening of the wine, then it is placed back into stainless steel for another six months. The beautiful rounded flavours and smooth buttery texture is juicy and rewarding – perfect for semi-hard cheeses like younger Fontinas and Asiago Pressato. However more mature goat cheeses are also perfect, as are Robiolas.
