The original Irish farmhouse blue cheese. Originally made by Louis and Jane Grubb, now their daughter Sarah heads production with her family. Using the milk from their own herd of Friesian cattle and then matured on site at the farm. The creamy rich texture is well marbled with nutty roqueforti moulds which – with effective maturing in the coolest part of the cellar with high humidity – makes the pate start to gently ooze and melt. Wonderfully balanced between the buttery curds and the persistently minerally moulds, this cheese is notably versatile. A torchbearer.
