Matured for a minimum of five months in a vat of vine pressings of Barbera d'Asti wine, this cheese is somewhat like a traditional toma-style Piedmontese cheese. The texture is slightly crumbly, with a faint grittiness emerging in more aged cheeses. The sweetness of the goat's milk comes through the wine infusion, with flavours becoming greatly more pronounced with longer maturation. Opening fruity and floral and aromatic, the finish turns quite spicy, and lingers for some time after the initial taste.
