Made with unpasteurised Guernsey milk – the milk has naturally high levels of carotene (the reason for the golden pate) – using vegetable rennet. The cheese has a rather French farmhouse style with a creamy rich pate, yet still slightly firm and flaky in the centre. The taste is rich and buttery, fluttering between sweetness and saltiness, with a gentle earthy aroma.
