Malvasia, Trebbiano and Canailo Nero. Made from air dried grapes, as the clusters are hung from the ceiling in warm cellars for 6 months before being pressed and aged in small barrique barrels at low temperatures for a slow fermentation. After 5 years the wine is bottled. It has a delicate pale orange/ gold colour and the honeyed aroma of wine made from grapes affected by Botrytis (noble rot) from the drying out process. This Vin Santo has 22% residual sugar), making it sweeter than usual, and is traditionally enjoyed with Cantuccini biscuits, or spicy cheeses like Pecorino Toscano or Gorgonzola. A lovely way to end a meal.
