Only a few cheeses are available of this alpine cheese made during the summer months when the cattle are grazing on the fragrant pastures. After the cheese is made it is placed into old wine barrels lined with sweetly scented hay and herbs of the pastures to lend a wonderful fruity and bosky character, as well as a dry crumbly texture. Enjoy with Mostarda di Frutta & dry white wine.
