From the “La Cerdanya” zone in Lerida in the Spanish Pyrénées this unpasteurised sheep’s milk cheese is made to a traditional country recipe and the smooth rind has been brine rubbed to give a lovely pale glow with a sweetly earthy savoury floral flavour becoming more intense with maturing. The season is between December and April.
